The traditional gaucho knife has its roots in Brazilian culture.
Gauchos, or cowboys, would slaughter a cow from time to time and cut it into its primal cuts with their knives from the range. They would then place the primal cuts on swords, (or skewers as we now call them). They would then place them around a large open hardwood fire to cook them. As the outer layers became done, juicy and crispy, they used their sharpened Churrasco Knife to adeptly slice off small slabs of meat onto each other’s plates.
