Burning to Brazilian Ceviche

After my time at <title=”Burning Man” href=”https://en.wikipedia.org/wiki/Burning_Man” target=”_blank” rel=”wikipedia”>Burning Man, my life suddenly begins to take a turn again…. Burning that man impacted my life of course, as it does with all of us Burners in one way or another…. Its our journeys through the dust storms and dry supple clay baths that we start as one person and leave someone else…. Transformation is one word that is clearly the message of Burning Man… But how do do we bring Burning Man back with us you all may ask… We all have our ways of bringing the message back to us… its our experiences and inspiration that drives us to bring the man burning to our local communities to share the love and engulf the experience in some shape or form.
My story is as such…. Kick around and feel so lost the first few days of the burn… Feel so overwhelmed, filled with social anxiety and yet hope of what is to come…. But its those insecurities we hold on to that is really what burning is about… Taking a step into an unknown territory and learning how true loving, learning and survival on our own can be an amazing adventure… It’s overcoming our own fears or flaws and learning our strengths as well through all of this …
Could you do it?
Seven days and six nights in a dry barren desert? What would you eat? Eating… Yes, you are responsible for your own food unless you decide to chicken out and pay hundreds of dollars for some camp kitchen to prepare you bush kitchen meals for you… thats not radical self reliance now is it ? Eating, drinking, partying, learning, loving and so on and so forth are what makes up radical self reliance; it has many facets…
One of the beauties of the burn is the food that is shared amongst us… Food that is prepared from the heart and soul and is shared as part of the message of burning man, self reliance, survival, sustaining…. This is all part of the gifting policy that rules the principals and culture of burners. One of the food dishes that was shared was a ceviche… Ceviche? Really? at burning man? Yes , excellent idea to give you a refreshing snack that is healthy and cools you to the core. I did not get to enjoy such an experience while there but a friend of mine did… So after the burn, I decided I was gonna stop into Portland and visit a friend before my trek back to the “default world” is what we describe all of you folks we “normally” live with…
Ceviche is dish that is natively prepared in the coastal regions of North and South America, Europe, and the Islands. Ceviche is a dish I learned to create and master while i was working in Baja, California a few years ago. But Ceviche is also a staple in Brazil. Start your amazing Brazilian meal with an appetizer like this. So I decided that while staying here in Washington State to take that experience at Burning man a reality for myself….
Washington State is beautiful, and so is its produce, so it made it pretty easy for me to come up with an amazing version of Tuna Ceviche. This particular recipe has a lot of flavor and acidity from the Limes and Blood Orange juice, and yet a supple light creaminess from the coconut milk… It has just a hint of heat from the Jalapeno and a nice added zing with the Basil and Cilantro.
Northwest Brazilian Ceviche Recipe
½ lb Sushi Grade Tuna
4-5 Roma Tomatoes, brunoise
1 Red Onion, brunoise
1 Jalapeno, seeded, minced
2-3 Tbsp Basil, chiffonade
1 Tbsp Fresh Ginger, minced
2-3 Tbsp Cilantro, chiffonade
2-3 Tbsp Green Onions
1 Blood Orange, zested, juiced, segmented
1 Lime, zested and juiced
¼- ⅓ cup Coconut Milk
1 Tbsp Soy Sauce
¼- ⅓ cup Coconut Milk
Salt and Pepper, to taste
Firstly, mix the Tuna with lime juice, blood orange juice and segments, and half the Coconut Milk. Then, let it sit for 10 minutes covered and marinating in the fridge. Next, add the rest of the ingredients and mix well. Add Salt and Pepper to taste. Best if it is left to marinate for an additional 15-30 minutes, however, it can be served now. Finally, serve with Tortilla Chips.
This Brazilian Ceviche recipe is delicious. It speaks to you on many levels with this flavor profile. The combination of the lime and Blood orange really makes this a “perfect” harmonious flavor . The basil is also a nice addition because it also adds a different twist to liven up the palette at you finish one bite with such anticipation of the next. Be careful not to eat it all yourself, remember this is a dish that is meant to be shared… It’s a special mix of many different flavors, just like each of us and in one dish, or on one playa to survive and hold our own.
